Giraumon, Haitian pumpkin fries

These giraumon fries are quick and easy to make. Sprinkled with salt, fresh thyme and some grated cheese, they are a true delight.

Cook Time 15 minutes
Total Time 25 minutes


  • 1/2 giraumon pumpkin
  • Salt (to sprinkle on top)
  • Fresh Thyme (to sprinkle on top)
  • Grated Tête de Maure cheese or parmesan (optional to sprinkle on top)
  • Frying oil


  1. Remove the giraumon seeds, scrape out as much of the softer flesh

  2. Cut the giraumon into thin slices

  3. Fry them in sizzling hot oil

  4. Once they crisp up, take them out of the oil. Drain the excess oil

  5. Sprinkle with salt, thyme and cheese

  6. Enjoy immediately

Recipe Notes

These pumpkin fries don't stay crispy long. You should serve and eat them right out of the frying pan.
