This recipe calls for Haitian chocolate balls, most commonly known as chokola peyi. Feel free to substitute it for your favorite dark chocolate.
Also note that chocolate truffles are typically shaped like balls. But since I wanted to layer mine, I flattened those balls.
To make the sour orange custard, you can simply substitute sour orange juice for any lemon custard found online. The recipe I used is from Plated Cravings.
Mix all ingredients in a thick bottom pan
Heat at low eat until the chocolate melts fully
Mix well
Let cool.
Drop the cooled chocolate mixture in between two pieces of parchment. Refrigerate for a few hours.
Flatten using a rolling pin. Cut out in desired shape using a cookie cutter
Alternate your layers of chocolate with a thin layer of your favorite fruit custard
