A sumptuous Haitian peach jam
This is a two-step recipe. You must first cook the fruits and peel them before turning them into a jam

Ingredients
1
lb
of peaches
about 15 small peaches
2
cups
of sugar
1
cup
of water
1
pinch
fo salt
1
cinnamon stick
Star anise
Lime peel
Instructions
Wash the peaches
Transfer them to a pot and cover with water
Bring to a boil
Turn off the heat. Let cool. Discard the water
Once the peaches are cold enough to handle, peel the skin off
In a thick bottom pan, combine the sugar, water and sweet spices
Add the peeled peaches
Bring to a boil. Reduce de heat
Let simmer until the syrup starts thickening, making sure to remove the thick white foam that forms at the surface
Once the liquid coats a spoon (about 45 minutes) turn off the heat
Remove from the heat and allow your jam to cool down
Store in a tight glass jar.
