Stuffed Haitian beignets recipe

This recipe is an adaptation of Delish’s Easy Beignet Recipe found here. I added my own ingredients so as to create a Haitian banana beignet batter. Feel free to be creative about your stuffing. I stuffed some beignets with a caramel Fleur de Sel sauce, and others with a sour orange custard.

Cook Time 30 minutes
Total Time 50 minutes


Beignets batter

  • 3 ripe bananas
  • 1 cup of flour
  • 1 tsp. of baking powder
  • ¼ tsp of nutmeg
  • 1/4 tsp of cinnamon
  • 1/8 tsp. of salt
  • 2 large eggs separated
  • 3/4 cups of sugar
  • 1 tbsp. of melted butter
  • 1 tsp. of vanilla
  • 1 lime zest
  • ¼ cup of water
  • Oil for frying


  • Prepared salt caramel or a citrus custard or any custard of your choice

Cinnamon sugar coat

  • 1 tbsp of sugar
  • 1 tsp of cinnamon
  • Lime Zest


  1. In a bowl, mash the bananas
  2. Add the flour, baking powder, sweet spices and salt.
  3. In another large bowl, combine egg yolks, sugar, water, melted butter, vanilla and lime
  4. Whisk to combine
  5. Fold this mixture into the banana and flour mixture
  6. In another bowl beat egg whites until soft peaks form
  7. Incorporate the egg whites it into the batter. Be careful not to overdo it so as not to deflate the mixture.
  8. In a pot, heat the oil
  9. Fry the batter by the spoonful until your beignets turn golden
  10. Transfer to a plate lined with paper towel
  11. Let cool
  12. Using a syringe, stuff the fried beignets with prepared caramel or a fruit custard of your choice.
  13. Mix some sugar, cinnamon and lime zest in a bowl
  14. Roll your stuffed beignets in that mixture before serving
  15. Enjoy
