Yuca fries & Yuca Croquettes

Ingredients
For the yuca fries & cheese dip
Yuca
Oil for frying
Cream Cheese
Salt
Garlic
Pepper
Hot Pepper Sauce
Mayonnaise
For the yuca croquettes stuffed with herring

Instructions
For the yuca fries
Slice the yuca into fries
Soak them in salted water
Prepare the dip by mixing cheese, mayo, salt pepper, garlic and pepper sauce
Heat the oil with a piece of garlic
Drain the yuca
Fry them into the hot sizzling oil until they crisp
Sprinkle with salt and pepper
Serve with the cheese dip
For the croquettes
Boil the yuca in salted water
Once they’re fully cooked, discard the water and let them cool until they’re cool enough to handle
Remove the inner membrane and mash until there are no lumps
Season with cheese, salt, pepper and garlic
Using your hands, shape the puree into balls and stuff them with the
prepared herring
Fry each croquette in hot sizzling oil
Serve hot
Notes
You could use the croquettes recipes to make yuca beignets. Simply swap sweet spices for the seasonings.
