Le calalou djondjon, rago\u00fbt de gombo,\u00a0que je vous sers aujourd&#8217;hui met d\u00e9finitivement ces comp\u00e9tences \u00e0 l&#8217;\u00e9preuve. La pr\u00e9paration de ce plat infus\u00e9 de crabe bleu, de djondjon, de gombo frais et d&#8217;un duo de <a href=\"http:\/\/tchakayiti.com\/home\/fr\/salt-cured-pork-for-bold-flavors\/\">pieds de porc sal\u00e9s<\/a> et r\u00e9guliers est assez longue. Mais les heures pass\u00e9es en cuisine en valent la peine.\u00a0Faites-en vous-m\u00eame l&#8217;exp\u00e9rience.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pour un avant-go\u00fbt, voici le sc\u00e9nario auquel vous devez vous attendre :<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Entrez en cuisine \u00e0 10h00 du matin<\/h3>\n\n\n\n<p>Couvrez vos morceaux de viande sal\u00e9e d&#8217;eau fra\u00eeche dans laquelle vous les laisserez tremper jusqu&#8217;au moment de la cuisson. Profitez de l\u2019occasion pour nettoyer les crabes bleus en \u00f4tant leur partie ventrale avant de les rincer \u00e0 grande eau. Portez \u00e0 \u00e9bullition puis faites mijoter \u00e0 feu doux environ 45 minutes. Laissez refroidir compl\u00e8tement avant de passer le m\u00e9lange \u00e0 la passoire pour en extraire le bouillon.<\/p>\n\n\n\n<p>Vous pouvez maintenant vous octroyer une pause d\u2019une heure.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u00c0 1h00pm, faites cuire vos morceaux de porc<\/h3>\n\n\n\n<p>Pour acc\u00e9l\u00e9rer le processus de cuisson, je recommande&nbsp;l\u2019utilisation d\u2019une cocotte-minute remplie d&#8217;eau, de jus d&#8217;oranges am\u00e8res, de thym, de grains de poivre entier et bien s\u00fbr de l&#8217;in\u00e9vitable piment bouc. Faites cuire vos morceaux de viande pendant environ 30 minutes ou jusqu&#8217;\u00e0 ce qu\u2019ils soient tendres. Une fois la viande cuite, \u00f4tez-la du jus que vous mettrez de c\u00f4t\u00e9 pour votre rago\u00fbt.<\/p>\n\n\n\n<p>Si vous n\u2019avez pas de cocotte-minute, ne paniquez pas. Utilisez une casserole de tous les jours et laissez simplement cuire plus longtemps.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">A 2h00pm, vous pourrez finalement pr\u00e9parer votre rago\u00fbt<\/h3>\n\n\n\n<p>Cette \u00e9tape est la plus longue. Vous passerez pas mal de temps \u00e0 vos fourneaux \u00e0 go\u00fbter, faire dorer et r\u00e9viser votre assaisonnement alors que votre rago\u00fbt mijote \u00e0 feu doux. Vous serez sans doute tent\u00e9s d&#8217;augmenter le feu afin d&#8217;acc\u00e9l\u00e9rer la cuisson, mais ne le faites pas. &nbsp;Rappelez-vous que, pour \u00eatre r\u00e9ussi, votre gombo exige beaucoup de patience et d\u2019amour.<\/p>\n\n\n\n<p>Dans une casserole \u00e9paisse pr\u00e9chauff\u00e9e, ajoutez une cuill\u00e8re \u00e0 soupe d&#8217;huile dans laquelle vous ferez cuire oignon hach\u00e9, ail et poivron jusqu&#8217;\u00e0 ce qu&#8217;ils soient translucides. Ils lib\u00e8reront leur jus au fur et \u00e0 mesure ce qui fera \u00e9paissir votre rago\u00fbt. Environ 15 minutes plus tard, lorsque vos gombos auront perdu leur couleur verte vive, incorporez le bouillon de fruits de mer et le jus de cuisson de la viande au fur et \u00e0 mesure. C\u2019est le moment id\u00e9al de go\u00fbter et r\u00e9viser l&#8217;assaisonnement si n\u00e9cessaire.<\/p>\n\n\n\n<p>Ajoutez vos crabes bleus nettoy\u00e9s une demi-heure plus tard. Une fois cuits, vos crabes tourneront \u00e0 l\u2019orange vif. R\u00e9duisez alors le feu et laissez mijoter votre rago\u00fbt pendant environ 45 minutes en prenant soin de le remuer de temps en temps jusqu\u2019\u00e0 ce qu&#8217;il \u00e9paississe. Votre rago\u00fbt ne doit \u00eatre ni trop liquide ni trop sec. Il doit avoir juste assez de jus pour arroser le riz blanc qui l\u2019accompagnera. &nbsp;Une fois qu&#8217;il a atteint la consistance souhait\u00e9e, \u00e9teignez le feu. Votre rago\u00fbt est maintenant pr\u00eat, mais ne le servez pas encore.<\/p>\n\n\n\n<p>R\u00e9sistez \u00e0 l&#8217;envie de le manger tout de suite.
