J\u2019avais 16 ans. Je voyageais avec un groupe de 400 jeunes venant d\u2019un peu partout \u00e0 travers le monde. Notre premi\u00e8re destination \u00e9tait la terre voisine, la R\u00e9publique Dominicaine o\u00f9 j\u2019allais d\u00e9couvrir cette racine.<\/p>\n\n\n\n<p>Sur cette terre, nous \u00e9tions nourris de manioc quotidiennement. Ce tubercule figurait \u00e0 tous les menus, notamment celui du petit-d\u00e9jeuner. Un r\u00e9gime qui devint vite lassant pour mon palais qui n\u2019y \u00e9tait pas habitu\u00e9.<\/p>\n\n\n\n<p>En Ha\u00efti, nous avons certes le manioc, mais nous ne le consommons pas autant. Il se retrouve au menu \u00e0 l\u2019occasion dans un bouillon ou comme vivre alimentaire accompagnant certains plats. Mais jamais sur une base r\u00e9guli\u00e8re. Ni non plus comme \u00e9l\u00e9ment principal du menu. Un concours de cuisine allait cependant changer ma perception de cette racine.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">J\u2019ai red\u00e9couvert le manioc gr\u00e2ce \u00e0 un concours de cuisine<\/h2>\n\n\n\n<p>En 2018, mon agence digitale <a href=\"http:\/\/i7-lab.com\" target=\"_blank\" rel=\"noreferrer noopener\">i7lab<\/a> planifiait un challenge culinaire #EditionManioc pour un de nos clients. La description des multiples recettes possibles avec ce tubercule que partagea un chef m\u2019intrigua. Nos comp\u00e9titeurs pouvaient utiliser la racine elle-m\u00eame ou un de ses d\u00e9riv\u00e9s, \u00e0 savoir de la farine de manioc ou des kasav sucr\u00e9es ou sal\u00e9es. Je d\u00e9couvrais une racine versatile qui pouvait se servir en entr\u00e9e, plat principal ou dessert.<\/p>\n\n\n\n<p>A la fois intrigu\u00e9e et incr\u00e9dule, je d\u00e9cidai d de me lancer dans une aventure au manioc. Il fallait que j\u2019essaie ces recettes pour mieux comprendre et cerner cette racine.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Au menu: pudding de cassave, frites, croquettes au hareng, beignets fourr\u00e9s de caramel.<\/h2>\n\n\n\n<p>Des pr\u00e9parations sal\u00e9es. Des pr\u00e9parations sucr\u00e9es. Des plats aussi exquis les uns que les autres. Des plats dont certaines recettes proviennent d\u2019autres blogs. Des plats qui m\u2019\u00e9tonn\u00e8rent et m\u2019enchant\u00e8rent \u00e0 la fois. Vous en retrouverez la <a href=\"http:\/\/tchakayiti.com\/home\/fr\/cassava-pudding\/\">recette en cliquant ici<\/a>.A noter que cette fois-ci, dans un esprit d\u2019exploration, je le pr\u00e9parai avec des cassaves de J\u00e9r\u00e9mie, ville au Sud d&#8217;Ha\u00efti. J\u2019utilisai aussi un m\u00e9lange de sucre blanc et rouge. C\u2019est cette combinaison qui lui vaut cette teinte caram\u00e9lis\u00e9e qui inspira d\u2019ailleurs la sauce au caramel et au rhum fait-maison qui l\u2019accompagne.<\/li><li>Frites de manioc et farce de fromage<img decoding=\"async\" src=\"https:\/\/i0.wp.com\/tchakayiti.com\/home\/wp-content\/uploads\/2018\/09\/yuca-fries-haiti-frites-manioc-tchakayiti.jpg?resize=800%2C1200\" alt=\"\" width=\"800\" height=\"1200\"  data-recalc-dims=\"1\"> Comme le pudding passerait une heure au four, j\u2019en profitai pour tenter de cuire pour la toute premi\u00e8re fois du manioc. Je m\u2019aventurai \u00e0 faire frire quelques morceaux que je servis avec une farce au fromage dont vous trouverez la recette plus bas.Ces frites de manioc \u00e9taient croustillantes, croquantes et exquises. Un coll\u00e8gue se demanda m\u00eame pourquoi nous n\u2019en consommions pas chez nous. Je mis \u00e0 bouillir le manioc que je r\u00e9duisis en pur\u00e9e. Je l\u2019agr\u00e9mentai de fromage t\u00eate de maure, sel, poivre, et ail avant de le fourrer de hareng saur. Je fis frire ces croquettes dans une huile p\u00e9tillante chaude.<\/li><li>Beignets de manioc fourr\u00e9s au caramel<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i2.wp.com\/tchakayiti.com\/home\/wp-content\/uploads\/2018\/09\/caramel-stuffed-yuca-beignets-de-manioc-au-caramel-tchakayiti.jpg?resize=800%2C1200\" alt=\"Caramel stuffed cinnamon sugar coated yuca beignets, a unique treat. | tchakayiti.com\" width=\"800\" height=\"1200\"  data-recalc-dims=\"1\"> Il fallait bien terminer cette vir\u00e9e sur une note sucr\u00e9e. Intrigu\u00e9e par la recette de \u00ab cassava puffs with cinnamon sugar and caramel,\u00bb mentionn\u00e9e plus haut, je pr\u00e9parai ce que je baptisai en fran\u00e7ais \u00ab beignets de manioc fourr\u00e9s au caramel. \u00bb Ces beignets furent la pr\u00e9paration la plus \u00e9tonnante. J\u2019avoue les avoir pr\u00e9par\u00e9s avec encore plus d\u2019incr\u00e9dulit\u00e9 que les recettes pr\u00e9c\u00e9dentes. Je n\u2019imaginais pas que le manioc puisse \u00eatre transform\u00e9 en dessert aussi facilement. Consultez <a href=\"https:\/\/chewtown.com\/2015\/06\/cassava-puffs-with-cinnamon-sugar-and-caramel\/\">la recette<\/a> et vous verrez. Il faut simplement faire frire des croquettes non \u00e9pic\u00e9es de manioc r\u00e9duit en pur\u00e9e avant de les enrober d\u2019un m\u00e9lange de sucre et de cannelle et de les fourrer d\u2019une sauce au caramel. Ces bouch\u00e9es sont divinement d\u00e9licieuses. La prochaine fois que j\u2019en pr\u00e9parerai, j\u2019incorporerai cependant des \u00e9pices sucr\u00e9es et peut \u00eatre m\u00eame un peu de sauce de caramel \u00e0 la pur\u00e9e de manioc avant de la faire frire. Ainsi, chacun des beignets sera bien impr\u00e9gn\u00e9 et donc plus riche en saveur.<\/li><\/ol>\n\n\n\n<p>Avec cette escapade, le manioc m\u2019a conquise. Sur cette terre, nous \u00e9tions nourris de manioc quotidiennement. Ce tubercule figurait \u00e0 tous les menus, notamment celui du petit-d\u00e9jeuner. Un r\u00e9gime qui devint vite lassant pour mon palais qui n\u2019y \u00e9tait pas habitu\u00e9. En Ha\u00efti, nous avons certes le manioc, mais nous ne le consommons pas autant. Il se retrouve au menu \u00e0 l\u2019occasion dans un bouillon ou comme vivre alimentaire accompagnant certains plats. Mais jamais sur une base r\u00e9guli\u00e8re. Ni non plus comme \u00e9l\u00e9ment principal du menu. Un concours de cuisine allait cependant changer ma perception de cette racine. J\u2019ai red\u00e9couvert le manioc gr\u00e2ce \u00e0 un concours de cuisine En 2018, mon agence digitale i7lab planifiait un challenge culinaire #EditionManioc pour un de nos clients. La description des multiples recettes possibles avec ce tubercule que partagea un chef m\u2019intrigua. Nos comp\u00e9titeurs pouvaient utiliser la racine elle-m\u00eame ou un de ses d\u00e9riv\u00e9s, \u00e0 savoir de la farine de manioc ou des kasav sucr\u00e9es ou sal\u00e9es. Je d\u00e9couvrais une racine versatile qui pouvait se servir en entr\u00e9e, plat principal ou dessert. A la fois intrigu\u00e9e et incr\u00e9dule, je d\u00e9cidai d de me lancer dans une aventure au manioc. Il fallait que j\u2019essaie ces recettes pour mieux comprendre et cerner cette racine. J\u2019utilisai aussi un m\u00e9lange de sucre blanc et rouge. C\u2019est cette combinaison qui lui vaut cette teinte caram\u00e9lis\u00e9e qui inspira d\u2019ailleurs la sauce au caramel et au rhum fait-maison qui l\u2019accompagne. Frites de manioc et farce de fromage Comme le pudding passerait une heure au four, j\u2019en profitai pour tenter de cuire pour la toute premi\u00e8re fois du manioc.
