Je n\u2019avais jamais eu \u00e0 \u00e9cailler mes poissons avant. J\u2019\u00e9tais donc loin d\u2019imaginer que j\u2019aurais \u00e0 le faire un jour. Ce n\u2019est qu\u2019apr\u00e8s cuisson que je me suis rendu compte que mon poisson rose n\u2019avait pas encore \u00e9t\u00e9 nettoy\u00e9.<\/p>\n\n\n\n<p>Inutile de vous confirmer mon \u00e9tat de panique. Chez nous, nous nettoyons toujours les poissons avant de les faire cuire ! C\u2019\u00e9tait la fin de mon poisson. Il \u00e9tait ruin\u00e9. La tabl\u00e9e ne me le pardonnerait jamais. Enfin, c\u2019est ce que je me r\u00e9p\u00e9tais.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\"><img fetchpriority=\"high\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/tchakayiti.com\/home\/wp-content\/uploads\/2014\/04\/poisson-gros-sel-haiti-coarse-salt-red-snapper-tchakayiti.jpg?resize=800%2C1200\" alt=\"\" width=\"800\" height=\"1200\"  data-recalc-dims=\"1\"><\/h5>\n\n\n\n<h5 class=\"wp-block-heading\">Fort heureusement, ce jour-l\u00e0, j\u2019appris qu\u2019il est possible d\u2019\u00f4ter les \u00e9cailles d\u2019un poisson cuit.<\/h5>\n\n\n\n<p>Le seul inconv\u00e9nient est qu\u2019elles s\u2019en vont alors avec la peau du poisson et que certaines \u00e9cailles t\u00eatues demeurent. Je les enlevai du mieux que je pouvais en esp\u00e9rant que \u00e7a ferait l\u2019affaire pour mes invit\u00e9s exigeants.<\/p>\n\n\n\n<p>J\u2019avais tout de m\u00eame un second poisson que je pourrais \u00e9cailler afin de limiter les d\u00e9g\u00e2ts. C\u2019est ce que je fis avec l\u2019aide de ma m\u00e8re qui m\u2019appris comment le faire. Cependant, ce poisson, je n\u2019avais nullement envie de le cuire comme le premier. Et cette d\u00e9cision m\u2019inqui\u00e9tait.<\/p>\n\n\n\n<p>Voyez-vous, lorsque je m\u2019\u00e9tais lanc\u00e9e dans cette aventure au poisson gros sel, je m\u2019\u00e9tais donn\u00e9e pour objectif de cuire mes poissons diff\u00e9remment. Je les assaisonnerais de mani\u00e8re traditionnelle avec du sel, du jus de citron et du piment bouc. Mais le premier je le cuirais \u00e0 l\u2019ha\u00eftienne en le faisant mijoter dans de l\u2019eau que j\u2019utiliserais pour la pr\u00e9paration de mon court-bouillon. Ce jour-l\u00e0, je servis donc quand m\u00eame un poisson gros sel traditionnel et un poisson gros sel grill\u00e9. A ma grande surprise, la tabl\u00e9e ne me fit aucun reproche. La version grill\u00e9e avait simplement des saveurs plus accentu\u00e9es. J\u2019attribue cette diff\u00e9rence \u00e0 la m\u00e9thode de cuisson vu que j\u2019avais assaisonn\u00e9 mes deux poissons de la m\u00eame mani\u00e8re.<\/p>\n\n\n\n<p>Je vous invite \u00e0 essayer la recette qui suit. Enfin, c\u2019est ce que je me r\u00e9p\u00e9tais. Fort heureusement, ce jour-l\u00e0, j\u2019appris qu\u2019il est possible d\u2019\u00f4ter les \u00e9cailles d\u2019un poisson cuit. Le seul inconv\u00e9nient est qu\u2019elles s\u2019en vont alors avec la peau du poisson et que certaines \u00e9cailles t\u00eatues demeurent. Je les enlevai du mieux que je pouvais en esp\u00e9rant que \u00e7a ferait l\u2019affaire pour mes invit\u00e9s exigeants. J\u2019avais tout de m\u00eame un second poisson que je pourrais \u00e9cailler afin de limiter les d\u00e9g\u00e2ts. C\u2019est ce que je fis avec l\u2019aide de ma m\u00e8re qui m\u2019appris comment le faire. Cependant, ce poisson, je n\u2019avais nullement envie de le cuire comme le premier. Et cette d\u00e9cision m\u2019inqui\u00e9tait. Voyez-vous, lorsque je m\u2019\u00e9tais lanc\u00e9e dans cette aventure au poisson gros sel, je m\u2019\u00e9tais donn\u00e9e pour objectif de cuire mes poissons diff\u00e9remment. Je les assaisonnerais de mani\u00e8re traditionnelle avec du sel, du jus de citron et du piment bouc. Mais le premier je le cuirais \u00e0 l\u2019ha\u00eftienne en le faisant mijoter dans de l\u2019eau que j\u2019utiliserais pour la pr\u00e9paration de mon court-bouillon. Le second, je le ferais d\u2019abord griller avant de l\u2019arroser g\u00e9n\u00e9reusement de court-bouillon et de le garnir d\u2019\u00e9chalotes caram\u00e9lis\u00e9es. Avec deux pr\u00e9parations diff\u00e9rentes et un poisson partiellement \u00e9caill\u00e9, aurais-je assez de poisson pour satisfaire mes convives ? J\u2019imaginais qu\u2019ils souhaiteraient que je leur laisse le poisson \u00e9caill\u00e9. Or, je voulais \u00e0 tout prix go\u00fbter mon poisson gros sel grill\u00e9. Cette m\u00e9thode de cuisson ne suit en rien la recette de poisson gros sel traditionnelle. Et j\u2019y tenais.&nbsp; Je d\u00e9cidai de faire fi de mes appr\u00e9hensions et de continuer avec mon plan. Ce jour-l\u00e0, je servis donc quand m\u00eame un poisson gros sel traditionnel et un poisson gros sel grill\u00e9. A ma grande surprise, la tabl\u00e9e ne me fit aucun reproche. Nous r\u00e9uss\u00eemes \u00e0 partager les poissons de mani\u00e8re \u00e0 ce que chaque personne puisse go\u00fbter aux deux pr\u00e9parations.
