Je dois vous dire qu&#8217;inconsciemment je venais de passer la nuit \u00e0 r\u00e9fl\u00e9chir \u00e0 cet article que je devais r\u00e9diger.<\/p>\n\n\n\n<p>C&#8217;est avec joie que j&#8217;ai vu resurgir tant de souvenirs. Je me suis retrouv\u00e9e devant une table de friandises. Ce genre de table \u00e9tait presque toujours garni de plateaux remplis de petits pains entass\u00e9s l\u2019un sur l\u2019autre, qu&#8217;enfants, nous d\u00e9gustions avec beaucoup d\u2019app\u00e9tit. J\u2019\u00e9tais moi-m\u00eame friande de la farce dont ils \u00e9taient fourr\u00e9s.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Ces petits pains n\u2019\u00e9taient nul autre que du pain tranch\u00e9 sans mie farci d\u2019une d\u00e9licieuse p\u00e2te au fromage dont la couleur variait selon l\u2019occasion.<\/h5>\n\n\n\n<p>Ma tante prenait particuli\u00e8rement plaisir \u00e0 ajouter quelques gouttes de colorant \u00e0 ses p\u00e2tes de fromage pour leur donner une note festive. Pour les f\u00eates de fin d\u2019ann\u00e9e, elle nous servait donc des mini sandwiches dont la farce \u00e9tait tant\u00f4t verte, tant\u00f4t rouge ce qui fascinait nos yeux d\u2019enfants. Nous n\u2019arrivions pas \u00e0 comprendre qu\u2019un fromage puisse changer de couleur sans changer pour autant de go\u00fbt. Nous \u00e9tions convaincus que le go\u00fbt variait selon la couleur. Apr\u00e8s tout, si les surettes et piroulis que nous d\u00e9gustions changeaient de saveurs, un sandwich ayant une p\u00e2te au fromage color\u00e9e ne saurait \u00eatre diff\u00e9rent.<\/p>\n\n\n\n<p>Ce n\u2019\u00e9tait bien s\u00fbr pas le cas. Nous nous ent\u00eations tout de m\u00eame \u00e0 go\u00fbter \u00e0 chacun des sandwiches color\u00e9s afin de v\u00e9rifier que les petits pains \u00e9taient tous de la m\u00eame saveur comme le pr\u00e9tendaient les adultes, ce qui nous valait bien des r\u00e9primandes. Nous engloutissions bien plus de sandwiches que de raison.<\/p>\n\n\n\n<p>Je garde aussi en souvenir le branle-bas li\u00e9 \u00e0 la pr\u00e9paration de ces sandwiches. Je revois encore une table de salle \u00e0 manger remplie de sachets de pains tranch\u00e9s et des femmes arm\u00e9es d\u2019un couteau \u00e0 pain s\u2019attelant \u00e0 \u00f4ter la mie du pain qu\u2019elles garnissaient ensuite de p\u00e2te de fromage avant de les d\u00e9couper en forme de triangles ou de petits carr\u00e9s.<\/p>\n\n\n\n<p>Malheureusement, je n\u2019ai pas de photos de ces pains dans mes archives. Elle sert de farce pour nos pains tranch\u00e9s et nos d\u00e9licieuses bouch\u00e9es au fromage. Nous la servons aussi telle quelle accompagn\u00e9e des tranches de baguettes grill\u00e9es ou simplement de biscuits sal\u00e9s que les convives tartinent eux-m\u00eames.<\/p>\n\n\n\n<p>C\u2019est cette p\u00e2te de fromage, version adulte, que je vous sers aujourd\u2019hui. Elle est certainement bien plus relev\u00e9e que celle que l\u2019on nous servait lorsque nous \u00e9tions enfants. Vous pouvez l\u2019agr\u00e9menter \u00e0 votre go\u00fbt. J\u2019\u00e9tais moi-m\u00eame friande de la farce dont ils \u00e9taient fourr\u00e9s. Ces petits pains n\u2019\u00e9taient nul autre que du pain tranch\u00e9 sans mie farci d\u2019une d\u00e9licieuse p\u00e2te au fromage dont la couleur variait selon l\u2019occasion. Ma tante prenait particuli\u00e8rement plaisir \u00e0 ajouter quelques gouttes de colorant \u00e0 ses p\u00e2tes de fromage pour leur donner une note festive. Pour les f\u00eates de fin d\u2019ann\u00e9e, elle nous servait donc des mini sandwiches dont la farce \u00e9tait tant\u00f4t verte, tant\u00f4t rouge ce qui fascinait nos yeux d\u2019enfants. Nous n\u2019arrivions pas \u00e0 comprendre qu\u2019un fromage puisse changer de couleur sans changer pour autant de go\u00fbt. Nous \u00e9tions convaincus que le go\u00fbt variait selon la couleur. Apr\u00e8s tout, si les surettes et piroulis que nous d\u00e9gustions changeaient de saveurs, un sandwich ayant une p\u00e2te au fromage color\u00e9e ne saurait \u00eatre diff\u00e9rent. Ce n\u2019\u00e9tait bien s\u00fbr pas le cas. Nous nous ent\u00eations tout de m\u00eame \u00e0 go\u00fbter \u00e0 chacun des sandwiches color\u00e9s afin de v\u00e9rifier que les petits pains \u00e9taient tous de la m\u00eame saveur comme le pr\u00e9tendaient les adultes, ce qui nous valait bien des r\u00e9primandes. Nous engloutissions bien plus de sandwiches que de raison. Je garde aussi en souvenir le branle-bas li\u00e9 \u00e0 la pr\u00e9paration de ces sandwiches. Je revois encore une table de salle \u00e0 manger remplie de sachets de pains tranch\u00e9s et des femmes arm\u00e9es d\u2019un couteau \u00e0 pain s\u2019attelant \u00e0 \u00f4ter la mie du pain qu\u2019elles garnissaient ensuite de p\u00e2te de fromage avant de les d\u00e9couper en forme de triangles ou de petits carr\u00e9s. Malheureusement, je n\u2019ai pas de photos de ces pains dans mes archives. Je promets cependant d\u2019en faire bient\u00f4t tels que je les revois dans mes souvenirs et de les partager en photo avec vous. La farce de ces petits pains, comme vous devez l\u2019avoir devin\u00e9 si vous avez lu mes derniers articles, se pr\u00e9pare avec notre fameux fromage T\u00eate de Maure. Simple et facile, elle est riche en saveurs et fait un excellent amuse-gueule. En Ha\u00efti, nous la servons sous diff\u00e9rentes formes. Elle sert de farce pour nos pains tranch\u00e9s et nos d\u00e9licieuses bouch\u00e9es au fromage. Nous la servons aussi telle quelle accompagn\u00e9e des tranches de baguettes grill\u00e9es ou simplement de biscuits sal\u00e9s que les convives tartinent eux-m\u00eames. C\u2019est cette p\u00e2te de fromage, version adulte, que je vous sers aujourd\u2019hui. Elle est certainement bien plus relev\u00e9e que celle que l\u2019on nous servait lorsque nous \u00e9tions enfants. Vous pouvez l\u2019agr\u00e9menter \u00e0 votre go\u00fbt.
