Le jour \u00e9tait enfin arriv\u00e9. Un porcelet avait \u00e9t\u00e9 achet\u00e9. Nous \u00e9tions convi\u00e9s \u00e0 un festin. Nous ne pouvions retenir notre joie.<\/p>\n\n\n\n<p>Pendant des semaines, sinon des mois, nous avions anticip\u00e9 ce repas. Des conversations anim\u00e9es s\u2019\u00e9taient tenues lors de d\u00eeners familiaux. Chacun devait, d\u2019une mani\u00e8re ou d\u2019une autre, contribuer \u00e0 cet \u00e9v\u00e9nement familial sans pr\u00e9c\u00e9dent. Et le jour \u00e9tait enfin arriv\u00e9.<\/p>\n\n\n\n<p>Il s\u2019agissait plut\u00f4t d&#8217;un \u00e9v\u00e9nement de deux jours. L&#8217;animal devait \u00eatre abattu et assaisonn\u00e9. Il devait aussi r\u00f4tir pendant quelques heures. Tout devait commencer 24 heures avant notre festin.<\/p>\n\n\n\n<p>Nous devions absolument assister au processus complet. Le cochon fut donc abattu devant un public de consommateurs de rhum ha\u00eftien. L&#8217;animal fut nettoy\u00e9. <a href=\"http:\/\/tchakayiti.com\/home\/fr\/cattle-meat-giblets\/\">Les tripes, abats et le sang<\/a> furent extraits et cuits ou conserv\u00e9s en vue de la pr\u00e9paration de diff\u00e9rents plats.<\/p>\n\n\n\n<p>Je re\u00e7us moi m\u00eame une invitation sp\u00e9ciale \u00e0 sept heures du soir ce jour-l\u00e0. J\u2019\u00e9tais convoqu\u00e9e \u00e0 la pr\u00e9paration du boudin de porc.<\/p>\n\n\n\n<p>Pendant des ann\u00e9es, j&#8217;avais mang\u00e9 ces intestins farcis sans en avoir jamais pr\u00e9par\u00e9s. C&#8217;\u00e9tait donc une joie pour moi de me retrouver dans cette cuisine et de me joindre \u00e0 la f\u00eate. Le sang fut assaisonn\u00e9 \u00e0 partir d\u2019instructions recueillies ici et l\u00e0, et vers\u00e9 dans les gros intestins qui&nbsp;furent ensuite attach\u00e9s avec un fil en vue de leur cuisson dans un bouillon.<\/p>\n\n\n\n<p>L&#8217;assaisonnement et la cuisson du porc eurent lieu le lendemain des heures avant l\u2019arriv\u00e9e des invit\u00e9s. Je ne pu assister \u00e0 cette partie. Nos consommateurs de rhum \u00e9taient cependant fid\u00e8les \u00e0 leur poste.
