En fait, il faut autant d\u2019agilit\u00e9 pour grimper un cocotier que pour en couper les fruits surtout que chez nous nous mangeons nos cocos dans leur int\u00e9gralit\u00e9.<\/p>\n\n\n\n<p>Eau de coco et pulpe n\u2019\u00e9chappent en effet pas \u00e0 notre faim et soif. Nous les d\u00e9gustons fraichement cueillis de l\u2019arbre. Pour ceux qui ne s\u2019y connaissent pas, les vraies noix de coco sont plut\u00f4t grosses, de formes ovales et de couleur verte ou orange comme l\u2019illustre la photo. Celles vendues \u00e0 l\u2019\u00e9tranger sont d\u00e9pouill\u00e9es d\u2019une bonne partie de leur coque et s\u00e9ch\u00e9es.<\/p>\n\n\n\n<p>Comme je le disais plus haut, couper un coco est tout un art. Il faut d\u2019abord percer un trou juste assez gros pour permettre de lib\u00e9rer l\u2019eau de coco sans laisser sortir la pulpe blanche que nous appelons \u00ab nannan \u00bb en cr\u00e9ole. Il existe deux types de nannan : ole et r\u00e8k. Le nannan ole est plut\u00f4t fine souple et mall\u00e9able, et s\u2019ajoute parfois \u00e0 l\u2019eau de coco alors que le nannan r\u00e8k est la pulpe s\u00e9ch\u00e9e et plut\u00f4t dure et \u00e9paisse qui se d\u00e9tache plus difficilement de la coque.<\/p>\n\n\n\n<p>Nous mangeons g\u00e9n\u00e9ralement nos nannan \u00e0 l\u2019aide d\u2019une cuill\u00e8re artisanale fabriqu\u00e9e \u00e0 partir de la coque du fruit. Vous devez certainement vous demander pourquoi. Ma r\u00e9ponse est simplement celle-ci : le nannan est bien meilleur lorsqu\u2019on le mange ainsi.<\/p>\n\n\n\n<p>La noix de coco joue aussi un grand r\u00f4le dans notre cuisine.
