Elle en connaissait le produit final pr\u00eat \u00e0 la consommation qui faisait la joie de ses matins depuis toujours, mais ne savait pas vraiment d\u2019o\u00f9 il provenait.<\/p>\n\n\n\n<p>Grande fut donc sa surprise lorsque je lui annon\u00e7ai que nous avions aussi un caf\u00e9ier dans notre cour. Le doute se lisait sur son visage, mais elle me suivit quand m\u00eame jusqu&#8217;\u00e0 l\u2019arbre dont je lui d\u00e9crivais les fruits tout en lui expliquant le processus de fabrication du caf\u00e9. Son regard \u00e9merveill\u00e9 devant notre fr\u00eale caf\u00e9ier et ses fruits, qu\u2019elle n\u2019avait pas imagin\u00e9s ainsi, me surprit.<\/p>\n\n\n\n<p>Ce n\u2019\u00e9tait pas la premi\u00e8re fois qu\u2019un \u00e9tranger restait bouche b\u00e9e \u00e0 la vue du caf\u00e9ier. Deux ans plus t\u00f4t, j\u2019avais en effet eu \u00e0 expliquer \u00e0 quelqu\u2019un d\u2019autre que les fruits du caf\u00e9 s\u2019appelaient des cerises qui contenaient deux noyaux. Sa r\u00e9action m\u2019avait quand m\u00eame \u00e9tonn\u00e9e. Ayant toujours v\u00e9cu \u00e0 proximit\u00e9 d\u2019arbres fruitiers et de jardins de l\u00e9gumes, je n\u2019arrivais pas encore \u00e0 comprendre qu\u2019ailleurs \u00e0 travers le monde certains ignoraient \u00e0 quoi ressemblaient les fruits \u00e0 la base de cet or noir pourtant si convoit\u00e9.<\/p>\n\n\n\n<p>Vous qui n\u2019avez encore jamais vu le vrai caf\u00e9 de votre vie, permettez moi donc, aujourd\u2019hui, de vous pr\u00e9senter le caf\u00e9ier et ses cerises. Ceux de notre cour sont des arbustes ch\u00e9tifs qui semblent avoir une pr\u00e9f\u00e9rence pour nos bananiers. Ils poussent en effet \u00e0 l\u2019abri des feuilles de bananes dont l\u2019ombre semble les aider \u00e0 produire plus de fruits.<\/p>\n\n\n\n<p>Vertes \u00e0 la naissance, les cerises du caf\u00e9ier, comme beaucoup d\u2019autres fruits, deviennent rouges en murissant. Si vous en cueillez une m\u00fbre et donc rouge et prenez le temps d\u2019en go\u00fbter la chair comme j\u2019ai eu \u00e0 le faire une fois, vous serez \u00e9tonn\u00e9 de constater que ces cerises ont un go\u00fbt de feuille sucr\u00e9, \u2013 selon mes papilles \u2013 go\u00fbt totalement \u00e9loign\u00e9 de celui du caf\u00e9 grill\u00e9 qui aromatise nos tasses du matin.<\/p>\n\n\n\n<p>En fait, le go\u00fbt du caf\u00e9 d\u00e9pend \u00e9norm\u00e9ment des \u00e9tapes qui suivent. Une fois \u00e0 maturit\u00e9, les cerises de caf\u00e9 sont cueillies et mises \u00e0 s\u00e9cher, \u2013 chez nous, bizarrement, ils les laissent au dehors jour et nuit et m\u00eame sous la pluie \u2013 un processus qui les noircit, pour ensuite \u00eatre grill\u00e9es et r\u00e9duites en poudre au pilon. Je vous d\u00e9cris bien s\u00fbr ici la m\u00e9thode artisanale de fabrication du caf\u00e9, une m\u00e9thode qui produit un caf\u00e9 assez cors\u00e9, bien plus cors\u00e9 que le caf\u00e9 commercialis\u00e9.<\/p>\n\n\n\n<p>A tant parler du caf\u00e9ier il me vient une forte envie d\u2019une bonne tasse de caf\u00e9.
