Mes articles en principe parlent de la gastronomie et de la cuisine ha\u00eftienne, donc pourquoi cette distinction ?<\/p>\n\n\n\n<p>Quand je parle des quen\u00eapes, Jacmel est la ville, ou le \u00ab peyi \u00bb qui me vient en t\u00eate. Pas n\u00e9cessairement parce qu\u2019elle est la ville principale des quen\u00eapes, mais parce que je garde un souvenir particulier de celles que j\u2019y ai d\u00e9gust\u00e9 lors de ma premi\u00e8re visite.<\/p>\n\n\n\n<p>Je devais avoir 9-10 ans lorsque nous part\u00eemes \u00e0 destination de cette ville. C\u2019\u00e9tait la premi\u00e8re fois que je laissais les limites de Port-au-Prince pour partir vers une ville de province. Ce trajet, je le fis debout \u00e0 l\u2019arri\u00e8re de la voiture de mon p\u00e8re, les cheveux au vent. Une v\u00e9ritable aventure pour l\u2019enfant que j\u2019\u00e9tais. Je ne me rappelle pas trop les d\u00e9tails de cette journ\u00e9e, mais j\u2019en garde un pr\u00e9cieux souvenir sucr\u00e9.<\/p>\n\n\n\n<p>C\u2019est dans cette ville que j\u2019ai d\u00e9couvert combien \u00ab la douce qui vient \u00bb \u2013 comme le crient aujourd\u2019hui les vendeurs ambulants de Port-au-Prince pour annoncer leur arriv\u00e9e \u2013 peut \u00eatre charnue et sucr\u00e9e. Je nous revoie en famille, sur la place principale de Jacmel achetant et d\u00e9gustant un sachet rempli d\u2019\u00e9normes quen\u00eapes, comme je n\u2019en avais jamais vues. Elles \u00e9taient grosses, charnues, juteuses, extr\u00eamement sucr\u00e9es et surtout fondantes. Il suffisait de les porter \u00e0 la bouche pour que la pulpe jaune orang\u00e9e se d\u00e9tache de la graine, ce qui n\u2019est pas toujours le cas \u2013 la pulpe de ce fruit tend le plus souvent \u00e0 s\u2019attacher au noyau duquel elle ne se d\u00e9tache pas toujours facilement. Il faut sucer le noyau pour arriver \u00e0 en \u00f4ter la chair compl\u00e8tement. Donc ces quen\u00eapes fondantes \u00e9taient une grande d\u00e9couverte pour mon palais d\u2019enfant. A noter que plus les quen\u00eapes sont juteuses plus elles sont fondantes et qu\u2019elles sont parfois s\u00fbres.<\/p>\n\n\n\n<p>Ce jour-l\u00e0, j\u2019eus aussi l\u2019agr\u00e9able surprise de d\u00e9couvrir les quen\u00eapes \u00ab marassa \u00bb. Ce terme s\u2019utilise chez nous pour d\u00e9signer les quen\u00eapes \u00e0 noyau scind\u00e9 en deux, un ph\u00e9nom\u00e8ne qui se rencontre chez les quen\u00eapes rondes et non celles qui sont de forme plut\u00f4t ovale. Mes fr\u00e8res et s\u0153urs et moi \u00e9tions enchant\u00e9s par ce ph\u00e9nom\u00e8ne et aussi par le fait que chacun de ces noyaux avaient une face aplatie l\u00e0 o\u00f9 ils s\u2019unissaient. Nul besoin de vous dire que d\u00e9buta une v\u00e9ritable comp\u00e9tition \u00e0 qui trouverait le plus de marassa et que les quen\u00eapes furent par cons\u00e9quent vite englouties.<\/p>\n\n\n\n<p>Telle fut ma premi\u00e8re aventure et rencontre avec la ville de Jacmel et ses quen\u00eapes. Aujourd\u2019hui, je suis encore fan de ce fruit qui se d\u00e9guste durant le mois d\u2019ao\u00fbt, saison d\u2019abondante r\u00e9colte et durant laquelle ces fruits envahissent donc nos trottoirs.
