Si vous n\u2019\u00eates pas alertes, vos papilles risquent de ne se d\u00e9lecter que de l\u2019odeur du ma\u00efs qui se r\u00e9pand dans la maison durant la cuisson.<\/p>\n\n\n\n<p>Le ma\u00efs frais a toujours \u00e9t\u00e9 notre gourmandise d\u2019apr\u00e8s diner. Nous en faisons une partie int\u00e9grante de nos menus quotidiens au d\u00e9but du mois de juin, bien que le mayi boukannen envahit en g\u00e9n\u00e9ral nos trottoirs durant les premiers jours du mois de Mai. C\u2019est \u00e0 cette \u00e9poque que les vendeurs ambulants installent leurs grilles de fortunes qui se rep\u00e8rent facilement vu que les alentours sont toujours bourr\u00e9s de pelure de ma\u00efs.<\/p>\n\n\n\n<p>A la maison, nous pr\u00e9f\u00e9rons attendre les r\u00e9coltes abondantes de notre zone car le ma\u00efs en est plus frais, donc plus juteux et l\u00e9g\u00e8rement sucr\u00e9. Du vrai mayi ole comme nous disons si bien chez nous.<\/p>\n\n\n\n<p>Nous en achetons toujours directement des habitants se trouvant au bord de la route \u00e0 l\u2019entr\u00e9e de Fermathe. Leur pr\u00e9sence pour nous est signe que la saison du bon ma\u00efs est vraiment arriv\u00e9e, m\u00eame s\u2019il y en avait d\u00e9j\u00e0 de disponible ailleurs sur le march\u00e9.<\/p>\n\n\n\n<p>Il est important de noter que notre ma\u00efs local a plut\u00f4t des grains durs et donc un temps de cuisson plus long que le ma\u00efs vendu \u00e0 l\u2019\u00e9tranger. Les grains en sont si durs que certains se transforment en popcorn sur le gril. Ceci arrive en g\u00e9n\u00e9ral avec le mayi rek, c\u2019est-\u00e0-dire le ma\u00efs plus mature qui est ou rest\u00e9 sur l\u2019arbre plus longtemps ou a \u00e9t\u00e9 cueilli depuis un bon bout de temps et donc perdu un peu de son juteux.<\/p>\n\n\n\n<p>Petite, je me tenais \u00e0 c\u00f4t\u00e9 du gril attendant justement que les grains se transforment en popcorn car il me fallait absolument avoir ce morceau de ma\u00efs. A l\u2019\u00e9poque mes yeux et mon app\u00e9tit d\u2019enfant ne comprenaient pas trop le concept du mayi ole. Les plus gros grains, donc le mayi rek, \u00e9taient plus attrayants.<\/p>\n\n\n\n<p>Je sais d\u00e9sormais que le mayi ole est le meilleur, m\u00eame s\u2019il me faut sacrifier en quantit\u00e9.
