Les kasav font partie de mon alimentation quotidienne depuis de nombreux mois, depuis ma d\u00e9couverte des kasav de Bellad\u00e8re pour \u00eatre exacte. Je n\u2019arrive m\u00eame plus \u00e0 me rappeler des mille et unes fa\u00e7ons de les consommer.<\/p>\n\n\n\n<p>Certains d\u2019entre vous, vous demandez tr\u00e8s certainement pourquoi je pr\u00e9cise le nom de la ville de Bellad\u00e8re (centre d\u2019Ha\u00efti, pr\u00e8s de la fronti\u00e8re avec la R\u00e9publique Dominicaine) pour parler des kasav vu qu\u2019on en pr\u00e9pare ailleurs et qu\u2019elles sont vendues un peu partout en Ha\u00efti.<\/p>\n\n\n\n<p>En fait, les kasav de Bellad\u00e8re diff\u00e8rent de celles que je consommais jusque-l\u00e0 \u00e0 Port-au-Prince. Elles se vendent emball\u00e9es dans des feuilles de bananes et ressemblent \u00e0 de petites serviettes souples et mall\u00e9ables.<\/p>\n\n\n\n<p>Pour ceux qui ne connaissent pas la kasav (cassave en Fran\u00e7ais), il s\u2019agit de minces galettes de manioc. Elles peuvent \u00eatre sal\u00e9es ou sucr\u00e9es au coco. Personnellement, je pr\u00e9f\u00e8re la version sal\u00e9e. Celles vendues \u00e0 Port-au-Prince sont habituellement croustillantes et ne peuvent \u00eatre pli\u00e9es sans se casser m\u00eame sans avoir \u00e9t\u00e9 pr\u00e9alablement r\u00e9chauff\u00e9es. Elles se vendent dans un sachet en plastique dans les supermarch\u00e9s, et on en trouve des g\u00e9antes au march\u00e9 notamment \u00e0 Fort-Jacques (dans les hauteurs de Port-au-Prince o\u00f9 j\u2019ai grandi).<\/p>\n\n\n\n<p>Par contre les kasav de Bellad\u00e8re ne se vendent pas compl\u00e8tement s\u00e9ch\u00e9es, ce qui explique pourquoi ces kasav fraiches sont si mall\u00e9ables. Elles doivent cependant \u00eatre s\u00e9ch\u00e9es \u00e0 l\u2019air frais pour une plus longue conservation. Autrement elles deviennent immangeables comme ce fut le cas de notre premier lot de kasav. En effet, la premi\u00e8re fois que mon oncle nous en a ramen\u00e9es de Bellad\u00e8re, nous \u00e9tions si fascin\u00e9s par l\u2019emballage de feuilles de bananes que nous avons omis de les sortir du paquet, ce qui nous a valu des kasav pleines de moisissures. Depuis nous les laissons \u00e0 l\u2019air frais dans un plateau. Elles deviennent croustillantes avec le temps, mais nous les consommons \u00e0 un rythme si acc\u00e9l\u00e9r\u00e9 qu\u2019il nous arrive rarement de nous retrouver avec des kasav croustillantes.<\/p>\n\n\n\n<p>Les kasav sont un snack rapide, et celles de Bellad\u00e8re pouvant \u00eatre facilement pli\u00e9es sous forme de sandwich, peuvent se manger de diff\u00e9rentes mani\u00e8res. Vous y ajoutez la garniture de votre choix. Il vous suffit de les passer au four jusqu&#8217;\u00e0 les rendre croustillantes, en prenant soin d\u2019ajouter votre garniture avant ou apr\u00e8s selon votre pr\u00e9f\u00e9rence. Moi par exemple, j\u2019ajoute la chiquetaille ou le beurre et mamba mentionn\u00e9s plus haut sur la kasav chaude et croustillante alors que je ferai fondre du fromage sur la kasav.<\/p>\n\n\n\n<p>Je pourrais continuer \u00e0 vous d\u00e9crire les diff\u00e9rentes garnitures possibles, mais maintenant \u00e0 vous de jouer. Comment mangeriez-vous les kasav ? Et si vous n\u2019en avez jamais mang\u00e9, laissez vous tenter. A ce qu\u2019on dit elles sont bien meilleures pour la sant\u00e9 que le pain.
