Haitian-style shrimp & grits in a creamy wine sauce
The secret to this divine sauce is in the wine. Do not use cooking wine, I beg you. Carefully select your favorite bottle and pour it generously.

Ingredients
For the shrimp

lb
of shrimp peeled and deveined

cl
of extra brut white sparkling wine
3
garlic heads chopped
1
stick of butter
½
tomato diced
¼
tsp
cayenne
¼
tsp
paprika
¼
tsp
chili

tsp
pepper
½
tsp
salt
1
splash of cream
Fresh parsley
for garnish
Green onions
for garnish
For the grits (optional)

cup
of grits
3
cups
of milk
1
bay leaf
½
tbsp
of salt
2
garlic heads
½
cup
of parmesan
Instructions
For the shrimp
In a pan, melt ½ the stick of butter with the garlic
When the garlic turn golden, add the diced tomato and toss
Incorporate the shrimp and seasonings
Pour the wine and simmer on low for a few minutes
Finish with a splash of cream
Turn off the heat and add the rest of the butter
Let it melt
Garnish with some chopped fresh parsley and green onions
Enjoy with grits, pasta, or your favorite sides
For the grits
In a saucepan combine the milk and seasoning
Bring to a boil
Incorporate the grits and cook for 5 minutes stirring occasionally
Incorporate the cheese
Turn off the heat and cover the saucepan
Let rest for about 5 minutes
Remove the garlic heads and bay leaf
Enjoy with the creamy shrimp sauce
