Cassava Pudding spiked with Rum

I discovered cassava pudding a couple weeks ago and really loved it. I actually combined 2 recipes because the one I was going to use originally required a bit more effort. Not only did it have too many eggs to my taste, but the eggs had to be separated, the whites beaten until they formed soft peaks…But let me spare you the details of how lazy I can get when it comes to baking and get right to the recipe… I used the simpler recipe but used the spices from the first version I had rejected. The result? A pudding with a smooth texture and just the right amount of sweet spices: cinnamon, nutmeg, ginger, vanilla, dark rum…I served it with a spiked caramel sauce found online, but the traditional way to serve it would be with a rum sauce. Ingredients

  • 4 cups of cassava (about 8 cassavas)
  • 2 eggs
  • 1 can of evaporated milk plus 1 can of water
  • 4 ounces of melted butter
  • 2 cups of sugar
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tbsp vanilla
  • 2 tbsp dark rum
  • Zest of 1 lime
  • Dash of salt
  • 1 cup of raisins
  • Brown sugar for the baking dish

Instructions

  1. Sprinkle the cassavas with water, wrap them in a damp towel and let soak for about an hour. The cassavas will absorb the water and rise
  2. Measure 4 cups of soaked cassavas
  3. Mix in the milk and crush the cassavas using a fork
  4. Add the water and beat until the mix becomes dough like
  5. Incorporate the melted butter, sugar and eggs. Mix well
  6. Add remaining ingredients and mix well
  7. Oil a glass dish with some oil or melted butter. Sprinkle generously with brown sugar before adding the batter
  8. Cook at 350 for an hour
  9. Serve warm with a rum sauce, spiked caramel sauce or a sauce of your choice.
